Ackee
& Saltfish
Ingredients:
2lb salted cod,
2 tbsp cooking oil
1 Onion, chopped
2 stalks scallion, chopped
1/2 Scotch Bonnet pepper, deseeded and chopped
2 cloves garlic
1 tsp fresh thyme, chopped
2 tomatoes, chopped
2 cans Jamaican ackee, drained
salt and pepper to taste
Method:
1.
Boil saltfish to remove excess salt. Flake.
2. Heat oil in a large frying pan, add onion, scallion,
hot pepper and garlic
3. Fry over low heat until onion is transparent, add
fresh thyme.
4. Add saltfish and fry, stirring constantly for 3 minutes,
then add tomatoes and ackee.
5. Toss gently so as not to break up ackees.
6. Sprinkle with black pepper before serving
