Beef
Patties
(If preferred, replace beef with chicken
or lamb)
Ingredients:
FILLING
2 tbs olive oil
2 onions, finely chopped
5 garlic cloves finely chopped
1 lb lean ground beef
1 tbs curry powder
1 tsp salt
1/2 tsp freshly ground black pepper
1/2 cup bread crumbs, dry
1/2 cup Chicken stock, or water
2 Green onions, finely chopped
PASTRY
500g Plain Flour
1/2 tsp Tumeric
1/4 tsp -salt
200 g Shortening or Butter; cold, diced
1/4 cup ice water or more if necessary
1 egg, lightly beaten
Method:
1. Heat oil in large heavy pan.
2. Add onions and garlic. Cook, stirring till onion
wilts.
3. Add ground meat. Cook, stirring until meat is browned.
4. Sprinkle with curry powder, salt and pepper. Cook
about 5 minutes.
5. Stir in breadcrumbs and stock or water. Cook, stirring
often, about 20 minutes. Mixture should be thick but
not dry.
6. Stir in green onions. Remove from heat and leave
to cool.
7. Make pastry by combining flour with tumeric and salt.
8. Rub in butter or shortening until crumbly. Add
9. water; gather into a ball.
10. Roll out to about 1/4" thickness and cut into
4" diameter circles.
11. Gather remaining dough together and lightly cut
out again.
12. Place about 1 Tbsp filling on each circle. Brush
edges with lightly beaten egg, fold over and seal.
13. Preheat oven to 400F. Place patties on baking trays
lined with aluminium foil. Brush lightly with remaining
lightly beaten egg.
14. Bake 25 to 30 till golden brown.
