Buljol

Ingredients:
1/2 lb. salt fish (salt cod)
2 medium size onions, finely chopped
2 red and green sweet peppers
A small piece of hot pepper (Congo Pepper)
1/2 of a carrot, grated
2 cups of thinly sliced cabbage
1 tbsp. lemon juice
3 tbsp. of salad oil or vegetable oil

Method:
1. Wash salt fish with lime juice
2. Boil the salt fish in a medium saucepan.
3. The water in the saucepan should cover the salt fish.
4. Drain the salt fish and repeat boiling procedure.
5. Drain the salt fish after boiling and let cool.
6. Squeeze the excess water from the salt fish.
7. Shred with two forks
8. Heat oil in a medium saucepan
9. Add the onions stir until cooked
10. Add the carrots stir for 2 minutes
11. Add the shredded salt fish and stir around for 4 minutes.
12. Try not to let the salt fish stick to the pan.
13. Stir in the cabbage for 1 minute. Do not allow to over cook.
14. Finally add both pepper ingredients. Stir so flavor is distributed and remove pan from stove.

Served with: Coconut Bake or Fired Bake (Dumpling)
