Curry
Goat
Ingredients:
3 lbs goat meat or mutton, chopped into small pieces
including bones
1 tbsp Salt
2 cloves garlic, crushed
1 lime
1 Onion, sliced
2 oz curry powder
1 tomato, chopped
1 scotch bonnet pepper
1 tbsp Thyme, chopped
1 tsp freshly ground black pepper
1/2 tsp ground allspice
2 stalks Scallion, chopped
1/2 tsp ginger root, finely chopped
2 tbsp vegetable oil
Method:
1. Wash the prepared goat meat and dry.
2. Mix together all the ingredients except oil and rub
into meat.
3. Leave to marinate for at least 2 hours.
4. Remove any large pieces of seasoning from the meat
(onion, scallion etc) and reserve.
5. In a large skillet, heat oil over medium heat and
add the meat.
6. Lower the heat, return the reserved seasonings to
the pan and add 2 cups water.
7. Cover and allow to simmer until meat is tender (about
2hours), add extra water if necessary.
8. Simmer for another 30 minutes |
