Breadfruit
Oil-Down
Ingredients:
8
ozs. cooked salt fish, flaked (or salt-beef, pig-tail)
1 pt coconut milk
1 large breadfruit cut into sections
1 hot pepper
thyme
1 stick celery, chopped
lime juice
chive
salt
Method:
1. Boil and drain salt fish
2. Wash the salt fish with the lime or lemon juice.
3. Add breadfruit and salt fish into a saucepan .
4. Add hot pepper, thyme, chive, celery and coconut
milk to the pan.
5. Bring to boil. Reduce heat and simmer for about 45-60
minutes.
6. When cooked, the liquid should all be absorbed and
the stew oily.
