Coconut Bread
Ingredients:
2 cups all purpose flour
1 tablespoon baking powder
1/8 teaspoon salt
1/2 cup sugar
1 large egg, slightly beaten
1/4 cup coconut milk
6 tablespoonsoft margarine, melted
1/2 teaspoon vanilla
6 tablespoon raisins, floured
1/2 small coconut, peeled and grated
Method:
1. Preheat oven at 350°F/180°C
2. Sift dry ingredients in a bowl.
3. Combine sugar, beaten egg, coconut milk, melted margarine,
vanilla, raisins and grated coconut.
4. Scrape mixture on a floured board and knead lightly
to form a dough.
5. Shape dough and place into a greased loaf pan and
bake for 45 minutes or until done.
